The passion for gastronomy and the impeccable attention to detail in service are what distinguish the professional career of Fabricio Pareja, Manuel Verástegui, and Evelyn Verastegui-Padilla, partners and now owners of the Merkado31 chain of restaurants.

The adventure began when Fabricio and Evelyn, who were married at the time, started their journey into the world of aromas and flavors by opening a small restaurant on the shore of the sea south of Lima, Peru, in the summer of 1999.

Cholo’s gives way to Merkado31, a new concept that offers the world the exquisite creations of Peruvian cuisine, internationally recognized for its variety and quality, enriched with the culinary fusion of various corners of the world.
